Whole Roasted Cauliflower

1 head cauliflower, leaves trimmed

3 Tablespoons Clearly Organic Butter

2 Tablespoons fresh dill, chopped

2 cloves garlic, minced

1 teaspoon lemon zest

1 teaspoon Clearly Organic Ground Cumin

1/4 teaspoon salt

1/2 teaspoon Clearly Organic Ground Black Pepper

Preheat oven to 350 degrees. Trim cauliflower leaves and cut stem flat, so the cauliflower can rest flat on the bottom of a casserole dish. Melt 3 Tablespoons butter in a bowl then add dill, minced garlic, lemon zest, cumin, salt and pepper. Spread butter mixture evenly over the top and sides of the cauliflower. Place cauliflower in casserole dish and cover with foil. Roast in preheated oven until tender and easily cut. About 75 minutes. Serve roasted cauliflower cut in wedges or pre cut into florets.
