Easy Vegetarian Chili

This small batch chili can be made using a Clearly Organic grain blend. It works as a soup stater in this recipe. By adding a few extra veggies and spices this organic chili is wholesome, delicious and easy to make.
1 package Clearly Organic Southwestern Style Ancient Grain Blend
1 (14.5oz) can Clearly Organic Diced Tomatoes
1 cup water
1 teaspoon Clearly Organic Chili Powder
1/2 teaspoon Clearly Organic Cumin
1/8 teaspoon Clearly Organic Ground Pepper
1 cup broccoli florets, cut into bite size pieces
1 can Clearly Organic Red Kidney Beans, rinsed and drained
In a 3 quart sauce pan add diced tomatoes, water and Clearly Organic Southwest Ancient Grain Blend. Stir to distribute and bring to a boil. Add chili powder, cumin and pepper then reduce heat, simmer on low for 15 minutes stirring occasionally. Rinse and drain kidney beans then add to pot. Stir in broccoli florets and continue simmering on low, with pot covered, for another 10 to 15 minutes. Season chili to taste. Serve with stone ground crackers and topped with pepper jack cheese.
